To be perfectly honest, I don’t know a ton about moose hunting in Maine. Everything I’ve ever read or heard about hunting in Maine sounded incredible, and 26 North’s photos back that up. What an experience to take a moose. Here in Colorado that tag runs $250 for a resident and a staggering $2150 for non-residents. Maybe someday.
Here’s Jim’s recipe for Red Curry Moose–with a little northeastern flair.
Red Curry Moose
Ingredients:
1lb moose cut into 1 inch cubes
3 tablespoons peanut oil
1 onion sliced
2 garlic cloves chopped
3 1/2 tablespoons red curry paste
2⁄3 cup milk
1 tablespoon maple syrup
1⁄2 cup beef stock
1 tablespoon fish sauce
2 tablespoons lime juice
2 tablespoons fresh chopped basil
3 cups rice
Instructions:
Add moose, oil, onion, and garlic and cook moose until browned.
Add curry, milk, maple syrup and cook 10-15 minutes on medium high
Add beef stock, fish sauce, lime juice, and basil, simmer for another 10-15 minutes.
Serve over rice
